In a small bowl, mix together the chia seeds and about 50 ml of milk.
Let it sit for 10 to 15 minutes, until the seeds absorb the liquid and become gel-like.
Heat the remaining milk in a saucepan (but do not boil it).
Add the honey, vanilla, and cinnamon.
Stir in the pre-soaked chia seeds.
Pour into a mug and enjoy warm.
Chia latte can also be prepared in several flavors, for example with Matcha powder, cacao powder, or a little espresso.
