Coconut Milk Chia Pudding with Mango

Ingredients
  

  • 400 ml 1¾ cups coconut milk
  • 4 tablespoons chia seeds
  • 1–2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Mango layer:

  • 1 ripe mango
  • 1 teaspoon lime or lemon juice

For serving:

  • fresh mango cubes
  • coconut chips
  • mint leaves

Instructions
 

  • Mix the coconut milk with the chia seeds, sweetener, and vanilla.
  • Let it rest for 10 minutes, then stir again so it doesn't clump.
  • Refrigerate for at least 2–3 hours (or overnight), until it reaches a pudding like consistency.
  • While that sets, blend the mango smooth with a bit of lime juice for a fresh, slightly tangy flavor.

Layering:

  • Spoon the chia pudding into glasses, then add a layer of mango cream on top.
  • Repeat the layers so the final result looks beautiful and visually appealing.
  • Serving: Top with fresh mango cubes and coconut chips, then garnish with mint.
