Date Energy Balls

Ingredients
  

  • 200 g 7 oz pitted dates
  • 100 g 3.5 oz ground walnuts or almonds
  • 2 tablespoons cocoa powder
  • 1 tablespoon coconut oil
  • 1 –2 tablespoons water
  • 1 teaspoon vanilla extract
  • For coating optional:
  • shredded coconut
  • cocoa powder
  • chopped walnuts
  • chia seeds

Instructions
 

  • If the dates are on the drier side, soak them in warm water for 10 minutes, then drain.
  • Transfer them to a food processor, then add the ground nuts, cocoa powder, coconut oil, and vanilla.
  • Process until you get a sticky, moldable mixture — if it's too dry, add a little water.
  • Shaping: Shape the mixture into small balls, then roll them in shredded coconut, cocoa powder, or chopped walnuts.
  • Serving: Refrigerate for at least 30 minutes so they firm up, then serve in small paper cups or on an elegant platter.
