Fresh Mushroom Salad

Ingredients

  • 300 g button mushrooms white or brown
  • 1 small red onion
  • 5 cherry tomatoes
  • 1 tablespoon corn
  • cucumber
  • 1 clove garlic
  • 1 bunch fresh parsley
  • 1 boiled egg
  • 2-3 tablespoons olive oil
  • 1-1.5 tablespoons freshly squeezed lemon juice
  • salt freshly ground pepper
  • optional:
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • a few drops of balsamic vinegar

Instructions

  • Slice the mushrooms very thinly.
  • Then slice the vegetables and the egg to your liking.
  • Next, mix together the olive oil and lemon juice with the remaining ingredients.
  • Season with salt and pepper (and if you are using them, stir in the mustard and honey as well).
  • After that, mix together the mushrooms, egg, corn, and vegetables with the dressing.
  • Finally, sprinkle with freshly chopped parsley.
  • Let it sit for 5 to 10 minutes so the mushrooms soften slightly and the flavors come together.
