Prepare the Matcha tea. In a wide, shallow bowl, sift in 2 tablespoons of Matcha powder to remove any lumps. Slowly pour in the hot water while continuously whisking until you see a smooth, green foam layer. Mix in the honey, then let it cool slightly while you prepare the cream.
Whip the cream. In a cold mixing bowl, whip the cold heavy cream at medium speed until soft peaks form.
Add the mascarpone and flavorings. Spoon in the mascarpone, and add the sugar, vanilla, and a pinch of salt. Mix together until smooth and thick. Optionally mix in 1 teaspoon of Matcha for a greenish color.
Dip the ladyfingers and layer the base. Dip each ladyfinger into the cooled Matcha tea for about 1-2 seconds, then arrange them closely at the bottom of a dish.
Add a layer of cream. Spoon half of the mascarpone cream over the ladyfingers, then gently spread it into an even layer.
Repeat the layers. Dip the second batch of ladyfingers into the Matcha tea, place them on top of the cream, then spread the remaining cream over them and smooth the top.
Cover and refrigerate. Cover the dish tightly and refrigerate for at least 4 hours, or overnight for best results.
Dust before serving. Just before serving, use a small sieve to evenly dust the remaining Matcha powder over the top.
