Ingredients

  • 100 g pumpkin puree
  • 1 egg
  • 80 g oat flour
  • 50 ml milk or plant-based milk
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 pinch ground ginger
  • 1 pinch salt
  • 1 tsp honey or maple syrup
  • a little oil for frying

Instructions

  • First, puree the pumpkin, then put it in a bowl.
  • Next, add the egg, milk, and honey or maple syrup.
  • Meanwhile, in a separate bowl, mix together the oat flour, baking powder, cinnamon, ginger, and salt.
  • Then, add the dry ingredients to the pumpkin mixture.
  • After that, stir until you get a thick but easily scoopable batter.
  • If it's too thick, then add a little more milk.
  • Next, heat a non-stick pan, then coat it lightly with oil.
  • Once it's hot, spoon smaller portions into the pan.
  • Then, cook over medium heat for about 2 to 3 minutes.
  • Once small bubbles appear on top, flip the pancake.
  • Finally, cook the other side until golden brown too.

Serving Suggestions

  • Even on its own, the pumpkin pancake tastes great, but you can dress it up in several ways.
  • For instance, serve it with Greek yogurt, fresh fruit, and a little maple syrup, since it's also especially good with walnuts or pecans.
  • If you want a truly fall-inspired touch, then sprinkle some cinnamon and pumpkin seeds on top.
  • You can also prep the pumpkin puree ahead of time. This way, in the morning, all you'll need to do is mix the ingredients, and your fall breakfast will be ready within minutes.
It's best to cook the pancakes over medium heat. That way, they'll turn nicely golden on the outside while staying soft on the inside.
