Sea Buckthorn Syrup with Honey and Fresh Ginger

Ingredients
  

  • 500 g fresh or frozen sea buckthorn berries
  • 700 ml water
  • 120 to 150 g honey to taste
  • 3 to 5 cm fresh ginger grated or sliced
  • Juice of 1 lemon
  • Optional: 1 cinnamon stick or a few cloves

Instructions
 

  • Prep First, rinse the sea buckthorn (if frozen, let it thaw slightly). Then, peel the ginger and grate it or cut it into thin slices.
  • Cook Next, place the sea buckthorn, water, and ginger in a pot. Bring to a boil over medium heat, then simmer for about 15 to 20 minutes, until the berries fall apart.
  • Strain After that, strain the mixture through a fine sieve or cheesecloth, pressing firmly to extract as much juice as possible.
  • Sweeten While the juice is still warm but not hot, stir in the honey and lemon juice until fully dissolved.
