Ingredients

  • 3 tbsp chia seeds about 30 g
  • 250 ml plant milk for example coconut or almond milk
  • 1–2 tsp ube powder
  • 1–2 tsp maple syrup or 2 chopped dates
  • 1/2 tsp vanilla extract
  • 150 g Greek yogurt
  • 1 handful fresh fruit for example blueberries, raspberries, mango

Instructions

  • First, whisk the plant milk, the ube powder, the maple syrup (or the chopped dates), and the vanilla extract in a bowl until smooth.
  • Then sprinkle in the chia seeds, and stir thoroughly.
  • Let it rest for 5 minutes, and then stir again so the chia seeds don't clump together.
  • Taste it, and if needed, then sweeten it a little more.
  • Afterward, cover it and put it in the fridge for at least 4 hours, but preferably overnight.
  • Finally, serve it layered in glasses: chia pudding, Greek yogurt, fresh fruit, and then repeat.

Notes

Ube powder gives an intense purple color, so if you'd like a lighter shade, then 1 teaspoon is enough.
It's also perfect for guests, because you can make it ahead, since it keeps in the fridge for 3 days.
Weight loss tip: leave out the maple syrup, and instead sweeten it only with the fruit.
