Ingredients

  • 40 g rolled oats
  • 200 ml plant milk for example coconut or almond milk
  • 60 g ube purée cooked, mashed purple yam
  • 1 tsp chia seeds
  • 1/2 tsp vanilla extract
  • 1 pinch salt
  • 1 tsp maple syrup optional
  • 50 g Greek yogurt
  • 1 tbsp shredded coconut
  • 1 handful fresh berries

Instructions

  • First, combine the oats, the plant milk, and the pinch of salt in a small pot, then bring it to a boil over medium heat.
  • Then lower the heat and cook it for 4–5 minutes while stirring, until the oats soften and thicken.
  • Next, stir in the ube purée, the chia seeds, and the vanilla extract, and cook for another 2–3 minutes until the oatmeal is evenly purple and creamy.
  • Afterward, remove it from the heat, sweeten it with maple syrup if you like, and let it rest for 1–2 minutes so the chia seeds can also swell.
  • Finally, serve it with Greek yogurt, shredded coconut, and fresh berries.

Notes

You can find ube purée in Asian grocery stores (often frozen) or online. If you can't get it, then you can also replace it with 1–2 teaspoons of ube powder.
Weight loss tip: leave out the maple syrup, because the natural sweetness of the ube and the berries is more than enough.
You can also make it ahead: it keeps in the fridge for 2 days, so when you reheat it, add a little plant milk.
